Lemon Zest Sugar: Crush 20 cardamom seeds in a mortar. Add the crushed seeds to a spice grinder along with 1 Tbsp sugar. Pulse until the cardamom seeds are equally dispersed. Add the mixture to a food processor along with the 1 cup of sugar, and pulse. Add 1 Tbsp of lemon zest (and optionally 1 tsp Yuzu Essence). Pulse until incorporated and lay out on a baking sheet to dry out the sugar. Store in an airtight container.
Orange Shrub: Crush 25 cardamom pods, pry them open and drop the seeds in a spice grinder along with the cardamom husks. pulse until the seeds are a coarse powder and set aside. Add 1 cup of sugar and 1 cup of water in a medium saucepan over medium-low heat. Stir until the sugar is completely dissolved. Add 1 cup of orange chunks, cardamom, and 1 bundle of thyme and cook for 10-15 minutes or until the syrup has become the color of the fruit and the fruit has lost its vibrancy. Add 1 cup of apple cider vinegar and bring the mixture back to a simmer (5-8 minutes). Strain using a fine-meshed sieve covered with 1 layer of cheesecloth. Pour into a jar and store in the refrigerator.
