  • 1 1/2 oz Rum (Light)
  • 1 oz Aperol
  • 1/2 oz Lemon Juice
  • Fresh Ginger
  • 1 1/2 oz Ginger Beer

Instructions

Mix the rum, aperol, and lemon juice into a shaker. Microplane 1/4 tsp fresh ginger. Shake with ice. Pour over ice into a chilled glass. Top with the ginger beer. Garnish with fresh ginger, mint and/or a slice of grapefruit.

Refreshing, will be a good summer drink. We didn’t have any fresh ginger, but I think that would have elevated the drink a bit
