Non-alcoholic Cocktail Rocks or Old-Fashioned Glass 7 ingredients

Recipe

  • 5 Mint Leaves
  • 1/2 Rosemary Sprig
  • 1/2 inch thick Lemon Slice
  • 1 tsp Lemon Zest Sugar with Cardamom
  • 1 oz Lemon Juice
  • 1 oz Orange Shrub with Cardamom & Thyme
  • Club Soda

Instructions

Muddle mint leaves, rosemary, lemon slice, and sugar together in a cocktail shaker until the mint is aromatic and the sugar is mostly dissolved. Add the lemon juice and shrub, and top with ice. Shake well, and strain into a rocks glass with ice. Garnish with a lemon wedge, mint leaves, or rosemary.

Lemon Zest Sugar: Crush 20 cardamom seeds in a mortar. Add the crushed seeds to a spice grinder along with 1 Tbsp sugar. Pulse until the cardamom seeds are equally dispersed. Add the mixture to a food processor along with the 1 cup of sugar, and pulse. Add 1 Tbsp of lemon zest (and optionally 1 tsp Yuzu Essence). Pulse until incorporated and lay out on a baking sheet to dry out the sugar. Store in an airtight container.

Orange Shrub: Crush 25 cardamom pods, pry them open and drop the seeds in a spice grinder along with the cardamom husks. pulse until the seeds are a coarse powder and set aside. Add 1 cup of sugar and 1 cup of water in a medium saucepan over medium-low heat. Stir until the sugar is completely dissolved. Add 1 cup of orange chunks, cardamom, and 1 bundle of thyme and cook for 10-15 minutes or until the syrup has become the color of the fruit and the fruit has lost its vibrancy. Add 1 cup of apple cider vinegar and bring the mixture back to a simmer (5-8 minutes). Strain using a fine-meshed sieve covered with 1 layer of cheesecloth. Pour into a jar and store in the refrigerator.
